According to the history of cooking, barbecue is one of the oldest cooking methods in the world (if not the oldest). The definition and history of this technique are quite controversial; we won’t go deep into it. It is difficult to explain it with a single definition.

But, what differentiates them from other types of cooking, as well as unify the various barbecue form is the presence of smoke.

According to food experts, the name originated from Spanish but became established in south American. While there are many types of meat for the barbecue, the primary meat is pork. This was probably because pigs were common in the region.

Whether as a cooking technique or item, it became widely accepted and used for large gatherings such as picnics and festivals. This is largely because it allowed for cooking in plenty.

The Filipinos – What pork and BBQ means to them

Grilling and BBQ have over the years been a significant part of the Philippines’ food and cooking culture. Everywhere around the cities, from parties, weddings, picnics, and streets are BBQed and grilled food.

Barbecuing, as a cooking method, encompasses many techniques and for this particular recipe, grilling is done over dry, direct heat of over a 500 °F (260 °C) hot fire.

According to the Filipino style of preparation, its grilling is done over wood charcoal for a few minutes and dipping into a jar of spicy vinegar before being served.

Pork as meat is so delicate and as such requires gentle heat when barbecuing. It is no surprise that pork happens to be a quintessential part of Filipino culture and food, especially knowing that they are sourced from pigs which are an indigenous Philippines animal.

History has it that offering given to God were pigs. This already suggests that the meat must be special of some sort. But, this does not mean that all Filipinos love it, but quite an interesting number of people do and consume it.
